A charismatic aroma of coal scuttles, wood embers, vapour rubs, lactic beers and wild flowers. Unusual and deeply entertaining. Lots of grassiness, light waxes, putty, crushed sea shells, carbon paper and olive oil. Reduction evolved it towards salinity with preserved lemons, rock pools, vivid minerality and a light petrolic note. The mouth was initially full of dried wildflowers, sunflower oil, putty, jasmine tea and bitter herbs. Still some sooty notes, wood char, newspaper ink and caraway distillate. Water brought gorse, more dried flowers, heather ales, coconut, sweet cereals, buttered oatcakes and things like lemon rind, boot polish and umami paste. Salty, savoury and very satisfying.
