We had an evocative image of lifting the cedar wooden lid of a small beehive in the middle of a meadow and peering at a glistening mass of bees hanging off the honeycomb. On the palate neat we discovered honey-sweetened oats, cask char, orange oil and fruity blackberry throat lozenges, while in the finish a tickling wood spiciness. After reduction we made a lickety-split espresso infused with honey and cinnamon, we accompanied the coffee with a berries and cream choux ring, gooseberry fools and pineapple tarts. In the long finish we had a glass of full-bodied Shiraz wine, very typical black fruit flavours combined with spicy notes of liquorice and pepper.
